Stomata is a tiny hole on the epidermis cells on stem or leaf. The function of stomata is to regulate water loss during transpiration and absorption of CO2 process, as well as in the photosynthesis process. This research was aimed to determine the stomata shape, size and density on the leaves of 5 arabica coffee varieties The experiment used a completely randomized design, with six varieties of Arabica coffee namely  Kartika 1, Kartika 2, S 795, Sigarar Utang, and Kopyol Bali. The results showed that the shape of stomata on seven varieties of coffee were all parasitic having 2 stomata guard cells. Based stomata density, Sigarar Utang and S 795 variety are more resistant to drought than the others. This variety can also be used for land conservation.
